- 2 tbsp olive oil
- 1 onion diced
- 3 garlic cloves minced
- 1 lb mixed mushrooms cremini, oyster, shiitake, sliced
- 2 tbsp flour or GF flour/cornstarch
- 1 cup vegetable broth
- 1 14 oz can coconut milk (full-fat)
- 2 tbsp tamari or soy sauce
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- ½ tsp thyme
- Fresh parsley for garnish
Heat oil in a pan. Sauté onion and garlic until soft. Add mushrooms and cook until browned (10 mins).
Stir in flour and cook 1 minute. Gradually add broth, coconut milk, tamari, tomato paste, paprika, and thyme. Simmer 10–15 mins until thickened.
Serve over mashed potatoes, rice, or noodles. Garnish with parsley.
