Cook: Grill, bake (400°F for 20–25 mins), or pan-sear until internal temp hits 165°F. Slice.
Street Corn Salad
Grill corn until charred (or sauté frozen corn in a dry skillet). Cut kernels off cob.
Toss with mayo, cotija, garlic, lime juice, chili powder, and cilantro.
Cilantro Lime Rice
Fold lime zest, juice, cilantro, and salt into cooked rice.
Assemble Bowls
Layer rice, chicken, corn salad, avocado, pickled onions, and toppings.
Finish with lime juice and hot sauce!
