2 cups (8 oz) sharp cheddar cheese, freshly grated
4 oz cream cheese, softened
1/2 cup mayonnaise (Duke’s or your favorite brand)
1 (4 oz) jar diced pimentos, drained
1/4 tsp garlic powder (optional)
1/4 tsp onion powder (optional)
1/4 tsp smoked paprika (optional, for a smoky flavor)
1/4 tsp cayenne pepper (optional, for a little heat)

Instructions
Grate the cheese: Use a box grater to grate the sharp cheddar cheese. Freshly grated cheese works best for texture and flavor.
Mix the base: In a large bowl, combine the softened cream cheese and mayonnaise. Mix until smooth and well combined.
Add the pimentos: Fold in the drained diced pimentos.
Season: Add the garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and a pinch of salt and black pepper. Adjust seasoning to taste.
Combine with cheese: Gently fold in the grated cheddar cheese until everything is evenly mixed.
Chill: Cover and refrigerate for at least 1 hour to allow the flavors to meld.
